Cheese Shell Tacos

Yield: 6 Servings

Per Serving: 1 Lean protein 3 Condiments Just need to add some greens to this one!

Ingredients

  • 3 cups of freshly shredded low-fat cheddar cheese

For the beef taco filling

  • 1 1/4 pound ground beef
  • 1/2 cup onion, diced
  • 3 garlic cloves, chopped
  • 1 jalapeno, seeded and diced
  • 3 tsp taco seasoning
  • 1/3 cup of water (if needed)

Directions

  1. Preheat your oven to 350°F.
  2. Place cheese in piles on a non-greased baking sheet, bake for 8 minutes until piles have melted into circles.
  3. Don't let the cheese color too much. let cool 2 minutes on the baking sheet. Put on paper towels blot off excess grease.
  4. To form shells, lay over a propped-up utensil. (Or you can use- a wide bowl or saucepan) Set aside to cool.

Taco filling: Make taco filling according to the package. Then add onion, garlic, and jalapenos.
