Balsamic Chicken & Peppers

Makes 4 servings Per serving: 1 Lean 1 Green 3 Condiments 1 Healthy fat

Ingredients

  • 36 oz Chicken breast
  • 2 cup Chopped Bell Peppers
  • 4 tsp Oil, olive
  • 2 Tbsp Chopped Scallions
  • 1 tsp Garlic
  • 1/2 tsp Rosemary
  • 1 Tbsp Worcestershire
  • 1 tsp Basil
  • 1/2 tsp Thyme
  • 3 tsp Balsamic Vinegar
  • 1/4 cup Chicken Broth

Directions

  1. Preheat oven to 375.
  2. In a bowl add green peppers and onions.
  3. In measuring cup stir balsamic vinegar, Worcestershire, olive oil, broth, minced garlic, and herbs.
  4. Pour sauce over peppers and onions. Toss until well coated.
  5. Place chicken breasts in baking pan and pour pepper mixture over.
  6. Cover pan loosely w/foil bake 45-60 minutes. Check chicken at 40 minutes. Spoon sauce from bottom of pan over top of peppers and chicken. Continue to bake until chicken has reached an internal temperature of 165
