Chicken Zucchini Stir-Fry

Ingredients
- 1/2 cup chicken broth
- 1 tsp almond flour
- 1 tsp rice vinegar
- 2 tsp soy sauce
- 1 tsp peanut oil
- 1 tsp minced garlic
- 1 tsp minced fresh ginger
- 9 ounces chicken breasts, cut into strips
- 1 cup zucchini, chopped
- 1/2 cup scallions, chopped
Directions
- Whisk together chicken broth, almond flour, rice vinegar, and soy sauce and set aside
- Heat peanut oil over medium-high heat in a wok.
- Add garlic and ginger and saute briefly
- Add chicken and stir-fry until no longer pink
- Add zucchini and scallions and continue sauteing until browned. Add sauce and bring to a boil.
- Reduce heat and simmer for 2-5 minutes.
