Chicken Zucchini Stir-Fry

Ingredients

  • 1/2 cup chicken broth
  • 1 tsp almond flour
  • 1 tsp rice vinegar
  • 2 tsp soy sauce
  • 1 tsp peanut oil
  • 1 tsp minced garlic
  • 1 tsp minced fresh ginger
  • 9 ounces chicken breasts, cut into strips
  • 1 cup zucchini, chopped
  • 1/2 cup scallions, chopped

Directions

  1. Whisk together chicken broth, almond flour, rice vinegar, and soy sauce and set aside
  2. Heat peanut oil over medium-high heat in a wok.
  3. Add garlic and ginger and saute briefly
  4. Add chicken and stir-fry until no longer pink
  5. Add zucchini and scallions and continue sauteing until browned. Add sauce and bring to a boil.
  6. Reduce heat and simmer for 2-5 minutes.
