Key West Chicken

Makes 2 servings, each serving gives 2 leaners (6 ounces cooked chicken each), 3 condiments, and 1 healthy fat.

Ingredients

  • 18 ounces raw boneless, skinless, chicken breast (equivalent to 12 ounces cooked)
  • 2 2/3 Tablespoons soy sauce
  • 2 tsp Splenda
  • 2 tsp vegetable oil
  • 1 garlic clove, chopped
  • 1 tsp lime zest

Directions

  1. In a shallow container, blend soy sauce, splenda, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat an indoor or outdoor grill for high heat.
  3. Spray pam on the grill grate. Discard marinade and grill chicken for 6 to 8 minutes on each side until juices run clear.
