Turkey Chili
Makes 4 servings
Ingredients
- 32 oz 95-97% fat free ground turkey (4 Leaners)
- One 10 oz can of diced tomatoes w/ peppers (Rotel-style) (2 1/3 Greens)
- One 28 oz can fire roasted diced tomatoes (6 2/3 Greens)
- One 4 oz can hatch green chiles (1 2/3 Greens)
- 4 t chili powder (make sure it is sugar free!) (8 Condiments)
- 1 t chipotle powder (2 Condiments)
- 1/8 t allspice (1/4 Condiment)
- 1/8 t cumin (1/4 Condiment)
- 1/8 t onion powder (1/4 Condiment)
- 1/8 t garlic powder (1/4 Condiment)
- 1/4 t salt (1 Condiment)
Optional Toppings per serving:
- 2 T (8 g) sliced green onion tops (1/6 Green)
- 2 T (2 g) roughly chopped fresh cilantro (1/8 Condiment)
- 2 T sour cream (1 Healthy Fat) OR ¼ avocado, sliced (1 Healthy Fat)
- If you wish to use 2 T reduced fat shredded cheddar cheese per serving (1/6 Lean), reduce the initial weight of the ground turkey to 28 oz
Directions
- Brown the ground turkey, drain it, then add all ingredients to your crockpot.
- Cook for 8 hours on low, or 4 hours on high.
- Alternatively, you can also cook this on the stove in a stock pot for about an hour on medium low.
- Divide between four bowls and serve with toppings.
