Crock Pot Beef Soup
Yield: 5 servings
Per serving: 1 Lean protein 1 ¾ vegetable serving 3 condiments
Ingredients
- Non-stick pan spray
- 1 cup chopped leeks or scallions
- 2 tsp chili powder
- 2 tsp cumin
- 3 garlic cloves
- 2 ¼ lbs chuck steak
- 15 ounces canned low sodium diced tomato
- 4 ounce can green chilies
- 32 oz chicken broth
- 1 cup cilantro
Directions
- Sauté the leeks or scallions over medium heat. Stir in the chili powder and cumin. Add meat until brown. Add garlic and sauté one minute. Add remaining ingredients and bring to a boil and cover until meat is soft.
- OR.............. Dump the whole thing in a crockpot and cook it on low overnight or even until lunchtime.
