Creamy Zucchini Pasta Jambalaya

Ingredients
- 9.1 oz raw cubes chicken
- 6 oz cooked shrimp
- 1 oz (2 slices) low-sodium extra lean turkey bacon
- 74.5 grams green bell peppers diced small
- 226 grams raw zucchini spiral cut noodles
- 50 grams scallions thinly sliced and divided
- 1.5 tsp olive oil
- 3 tbsp lite ranch dressing
- 1.5 tsp Cajun seasoning
- 1 tbsp Parmesan cheese
Directions
- Season chicken with 1/2 teaspoon Cajun seasoning, season shrimp with 1/2 teaspoon Cajun seasoning.
- Add oil to a pan over medium-high heat.
- Toss in chicken cook through set-aside.
- Toss in bacon cook until slightly brown sticking to the pan.
- With bacon in a pan add half the scallions and the bell peppers. Saute using the juices to deglaze the bottom of the pan.
- When they are tender add zucchini noodles until tender. Add chicken, shrimp, ranch dressing, the remaining 1/2 Cajun seasoning, and cook until heated through. Remove from heat add the other half scallions and Parmesan cheese; serve and enjoy!
