Spicy Chicken Tagine

Makes 2 servings

Per serving: 1 Leaner protein 1 fat 3 vegetables 2 condiments

Ingredients

  • 1/2 cup green onion
  • 1 cup zucchini
  • 18 ounces chicken breast
  • 2 teaspoons olive oil
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp. turmeric
  • 1/2 tsp cumin
  • 1 14 oz can diced tomatoes
  • 1/4 cup fresh cilantro

Directions

  1. Slice green onion and thinly slice zucchini.
  2. Cut chicken into strips. Heat olive oil in the pan and saute onion for 2 min.
  3. Add chicken and cook for another 2 min. Add zucchini to the pan and cook for another 2 min.
  4. Add spices and tomatoes.
  5. Bring to a boil and cook tagine covered for 5 min., or until chicken and vegetables are tender.
  6. Place in serving bowl and top with cilantro.
