Spicy Chicken Tagine
Makes 2 servings
Per serving: 1 Leaner protein 1 fat 3 vegetables 2 condiments
Ingredients
- 1/2 cup green onion
- 1 cup zucchini
- 18 ounces chicken breast
- 2 teaspoons olive oil
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp. turmeric
- 1/2 tsp cumin
- 1 14 oz can diced tomatoes
- 1/4 cup fresh cilantro
Directions
- Slice green onion and thinly slice zucchini.
- Cut chicken into strips. Heat olive oil in the pan and saute onion for 2 min.
- Add chicken and cook for another 2 min. Add zucchini to the pan and cook for another 2 min.
- Add spices and tomatoes.
- Bring to a boil and cook tagine covered for 5 min., or until chicken and vegetables are tender.
- Place in serving bowl and top with cilantro.
