Buffalo Chicken Spaghetti Squash Boats

Ingredients

  • 1 medium spaghetti squash, cooked and shredded
  • 18 oz cooked chicken breast, shredded
  • 1 cup shredded cabbage
  • 4 oz reduced fat shredded cheddar cheese
  • 1/2 cup diced scallions
  • 1/2 cup hot sauce
  • 1/4 cup + 2 TBSP reduced fat ranch dressing

Directions

  1. Preheat oven to 350. Place shredded spaghetti squash back in squash shells and place on a baking sheet.

In large mixing bowl, combine cooked squash with chicken, cabbage, cheese, scallions, hot sauce, and dressing.

Stuff each spaghetti squash shell with half the mixture and place baking sheet back in the oven. Bake for 15-20 minutes or until heated through. Serve immediately.

Serves 4. Per serving: 1 leaner, 3 green, 1 healthy fat, 1 condiment
