Melt in Your Mouth Chicken

Yield: 4 servings

Per serving: 1 Leaner Lean 2.5 Condiments (You still need 1 Healthy Fat per serving)

Ingredients

  • 28 oz raw boneless, skinless, chicken breasts or tenderloins - should cook down to 18 oz
  • 1- 1/2 cups low fat plain Greek yogurt - I used Fage 2% plain Greek yogurt
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Line a 13 x 9-inch baking pan with non-stick foil. This is optional but it makes clean up easier.
  3. Place chicken in a baking pan in a single layer.
  4. Combine yogurt with Parmesan cheese and seasonings in a medium-sized bowl.
  5. Distribute yogurt mixture evenly over chicken.
  6. Bake 45 minutes or until done. Be careful not to overcook.
