Crock Pot Cauliflower Pizza Casserole
Makes 6 servings Each serving provides: 3 green 1 ounce lean 2 ½ condiments
Ingredients
- 8 cups cauliflower
- 1 ½ cups marinara (less than 5 grams of carbohydrates per ¼ cup)
- ¼ teaspoon salt
- ½ teaspoon pepper
- 2 ounces turkey pepperoni
- 1 cup reduced-fat mozzarella
- 1 tablespoon oregano
- 1 tablespoon garlic powder
- 1 teaspoon chili flakes
Directions
- In a large bowl, combine cauliflower with marinara, garlic powder, oregano and chili flakes.
- Toss until fully coated then season with sea salt and pepper.
- Place half the cauliflower in the bowl of your slow cooker, and top with half of the mozzarella and pepperoni.
- Add the rest of your cauliflower and repeat the topping process.
- Cook on low for about 5 hours or on HIGH for 3 hours.
