Peanut Chicken

Makes 2 servings

Per serving: 1 lean 2.5 condiments 1 snack

Ingredients

  • 12 oz cooked chicken tenderloins, grilled
  • 1/4 cup PB2 – Powdered Peanut Butter
  • 1/4 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 tbsp + 1.5 tsp lite soy sauce
  • 1 packet Splenda
  • 1 tbsp apple cider vinegar
  • Additional water
  • 1/4 tsp red pepper flakes

Directions

  1. Combine all ingredients, except chicken in a small bowl
  2. I added almost 2 tbsp of water but try adding a little at a time to get the desired consistency. Stir until completely blended
  3. Serve with chicken and your favorite steamed veggies
